No bake Chocolate Bites
I stole this recipe from a woman who is great in the kitchen that I met not too long ago. She made it for me one day and I was madly in love with it, so how could I not try them again? These chocolate treats are super easy and quick to make, not to mention they don’t need any baking because they’re not regular cookies.
They are super fresh and delicious for summer, perfect for enjoying a treat at the end of a meal when you feel like something is missing to finish it off properly. This is a kind of chocolate salami, much loved by children but also by big gluttons, but presented in a slightly different way. These sweets are made even more special by the aftertaste of amaretto given by the cookies used but, if you don’t like them, you can very well replace them with other dry cookies (such as Saiwa gold or digestives…). In addition, I find that touch of flavor given by the salt flakes is wonderful, it is an added value to something already divine.
Try to make these goodies at home that will enchant every guest: one pulls the other and I’m sure they will soon be gone! You won’t be able to do without them, believe me!
Curiosity
You can store these treats in the freezer sealed in a container. To give a more alcoholic touch to these delicacies try adding 1-2 tablespoons of rum or whiskey to the melted chocolate that will garnish the base. However, remember to do this when the chocolate has cooled down or it will thicken! If you like a more aromatic but not alcoholic note, you could use the same dose of orange juice!
No bake chocolate bites
Ingredients
- 2 eggs
- 150 g sugar
- 80 g butter
- 100 g 60% dark chocolate
- 50 g dried fruit (pistachios or almonds or hazelnuts or walnuts)
- 130 g macaroons
- 200 g dark chocolate
- 200 g butter
- Salt flakes for garnish
Instructions
- In a small saucepan, whisk 2 eggs with the sugar until light and fluffy.
- Place the saucepan over low heat and continue to stir with a whisk for about 3 minutes. Then add 100 gr of chopped dark chocolate and mix everything together.
- Pour your chopped nuts into the saucepan, I used hazelnuts, and stir. Then add the crumbled macaroons and mix.
- Cover a rectangular mold with baking paper, or alternatively a round 20 cm diameter hinged mold, and pour in the mixture. Level it out and place it in the freezer for about 30 minutes.
- In the meantime, prepare the chocolate cream for the garnish: melt in a bain-marie, or in the microwave, 150 g of crumbled dark chocolate and then add the butter.
- Once half an hour has passed, pour the melted chocolate over the base of your cakes, level it and put it in the freezer for 2 hours.
- At this point make many small cubes and garnish with salt flakes. To make them even more beautiful you can also melt some white chocolate and with a teaspoon make some streaks.
- Place in the freezer until you need to serve them. Before tasting them, however, leave them in the open air for 2 minutes, enjoy!
