Ingredients
  

  • 2 eggs
  • 4 tbsp of Torciano Extra Virgin Olive Oil
  • 7 tbsp of milk
  • 1 oz of grated Parmesan cheese
  • 4,5 oz of flour
  • 1/2 sachet of baking powder
  • 14 oz of zucchini
  • 10 oz of mozzarella cheese
  • Grated cheese to taste
  • salt, pepper and nutmeg

Instructions
 

  • To prepare this stringy and creamy zucchini flan break the two eggs into a bowl and beat them together with the oil and milk.
  • Then add the flour, the grated cheese and half a sachet of baking powder for savory pies.
  • Season with salt, pepper and nutmeg.
  • Preheat the oven to 180 ° C (356 ° F).
  • Then grate the courgettes in julienne form and add them to the mixture.
  • Cut the mozzarella into cubes, remove excess liquid and add half of it to the bowl.
  • Pour everything into a hinged pan, level and garnish the surface with the remaining mozzarella. Then add also some grated cheese.
  • Bake for 40 minutes and serve hot, so that the mozzarella runs and surprises the guests!
