Zucchini Flan
Ingredients
- 2 eggs
- 4 tbsp of Torciano Extra Virgin Olive Oil
- 7 tbsp of milk
- 1 oz of grated Parmesan cheese
- 4,5 oz of flour
- 1/2 sachet of baking powder
- 14 oz of zucchini
- 10 oz of mozzarella cheese
- Grated cheese to taste
- salt, pepper and nutmeg
Instructions
- To prepare this stringy and creamy zucchini flan break the two eggs into a bowl and beat them together with the oil and milk.
- Then add the flour, the grated cheese and half a sachet of baking powder for savory pies.
- Season with salt, pepper and nutmeg.
- Preheat the oven to 180 ° C (356 ° F).
- Then grate the courgettes in julienne form and add them to the mixture.
- Cut the mozzarella into cubes, remove excess liquid and add half of it to the bowl.
- Pour everything into a hinged pan, level and garnish the surface with the remaining mozzarella. Then add also some grated cheese.
- Bake for 40 minutes and serve hot, so that the mozzarella runs and surprises the guests!
